We're exactly the same. Software upgrades are done overnight, generally at midnight. Hardware upgrades are done between 4am and 6am and vendors are required to be there.
When we're doing website/web-service upgrades, we upgrade each production instance one at a time and put it live when the upgrade is complete. There are very few upgrades which put our production system out of use, the business absolutely would not agree to it.
You absolutely cannot compare this to high levels of demand putting the Apple website out of order.
